I have a new salt shaker and pepper mill set; the body is wood but it has metal parts. The care instructions say not to immerse it in water but the rav said that it does require tvila.
How can I toivel it and immediately dry it well so as to preserve the materials?

I would imagine a one time immersion won't hurt it. (I've immersed appliances that clearly say do not immerse, and they worked just fine afterwards.)
How do you dry your wooden spoons?

I would put them in a bowl of rice for a few hours. The rice will absorb any excess moisture. Works every time I drop my phone in water,
Either way I wouldn't worry too much, it's only in water for a second.
