Why would a spelt lokshen kugel recipe be any different from a regular lokshen kugel recipe?

Well, I've tried a few modifications & they didn't work so well. This one, I believe, had you cover the kugel (maybe open at the end).

Anyhow, I was hoping it would come out better than my attempts.

I think it was in Binah and is it possible it was rice noodles? Or do you remember it was for sure spelt? Maybe you can change the title and get some more hits?

I saw your title but considering my tight schedule, didn't get to it. I was sure someone else would've posted it by now.

Here it is - please let us know how it came out!

Salt and Pepper Lokshen Kugel - Binah

1 (10 oz.) bag of medium spelt noodles or brown rice fettuccine
1 cup oil
4 eggs, beaten
1 Tbsp salt
1/4 - 1/2 tsp black pepper according to taste

Directions

Preheat oven to 425 F
Cook noodles according to directions.
Drain, then return to the pot and allow to cool to room temperature (20 to 30 minutes)
Add oil, eggs, and spices to the cooled noodles and mix well. Pour into a 9" x 13" pan. Cover and bake at 425 for 1 hour.
If you would like the top to be crunchy, uncover after 1 hour and bake 10 to 15 minutes more.

Kugel freezes very well.

I'm embarrassed to say I didn't make it yet, but am just about to.

But - doesn't that sound like an awful lot of oil? Has anyone here tried this recipe? (If I had applesauce I'd substitute some, but I don't. Would grated apples work?)

I was afraid of all that oil. I looked around for other recipes, & found, for example, 1/2 cup for 12 oz of noodles. A lot of recipes had sour cream, cheese etc so it was hard to tell. Well, I started with 1/3 c and ended up adding 1 more TBSP. So here's my version:

1 (10 oz.) bag of medium spelt noodles or brown rice fettuccine
2-3 TBSP Maple Syrup
1/3 cup + 1 TBS oil
5 Extra large eggs, beaten
2 tsp salt
1/4-1/2 tsp black pepper to taste

It came out great! I'm going to have another piece now!
