anyone have a good recipe for pasta with vegetables ex:carrots, zuccini, butternut squash) and no heavy cream or cheeses needed???

Can you clarify, do you mean excluding those vegetables you mentioned? or using them?

I roast zucchini, eggplants, onions, peppers and mushrooms with olive oil, salt, pepper and garlic powder and then mix it in with cooked pasta and use a good marinara sauce and mix. it sounds so simple but its delicious! I once made it for a party and everyone wanted the recipe!

I sauté or brown cut up onion. Cut up small chunks of pumpkin, sliced carrots and zucchini. Cook till getting soft stirring so they don't stick then add tinned tomato soup. You can add salt or pepper if wanted. Add pasta. You can eat it like this or put in casserole dish and cook for further time in the oven. Anyone who wants to make richer could add cheese. Super easy.
