I just got a vitamix as a gift. I want to take full advantage of it! what the best things to make in it other than smoothies? I havent even taken it out of the box yet so I didnt really figure out what functions it has.... but it says I can make soup from scratch?! does that mean I could just put it all the ingredients and it will make a soup? or is it just that u cook up a soup and then pour it in? in that case a hand immersion blender is much easier... so if anyone has any great recipes and tips please share!

If I were you I would hold off using it till Pesach cooking.

I love my vitamix. There are days I use it 5x.
I've made smooth green smothies, soups, fruit sorbet/icecream, nut butters, creamy sauces and dressings.
You can google search many recipes.
Many raw vegan recipes are quite yummy and Pesach friendly.

The other day I made a yummy creamy pesto that I served with zucchini noodles, made with a spiralizer, another favorite kitchen gadget.

I've also used my vitamix to make different types of flours, chickpea, quinoa.

BTW, greens that go through the vitamix do not need to be checked for bugs, but ask YLOR.

I put my ww flour into the vitamix and blend instead of sifting it. Much faster.

I use it for the same
chummus
halva
nut/ seed butters
homemade flours
blended kugel
blended soups
smoothies
Homemade coconut milk
baby food
Im sure theres more...

You probably need to cook the soup first (otherwise the texture will be weird, and it'll have raw onion taste and such!), but it blends MUCH smoother than an immersion blender. It's super velvety smooth, where an immersion blender is mostly smooth with a little texture. It depends what you are looking for in your soup.

A vitamix is just a really good, really expensive professional quality blender. So anything that you can make in a food processor or blender, you can make in a vitamix.
