Recipe for Middle Chuck Please?

Anyone know what I can make with Middle Chuck? how do I cook it bake it? maybe for a soup? It should be soft and tasty.

The middle chuck is relatively tender, but it does contain large pieces of fat. It's usually 1-2" thick. You may want to trim out the fat and roll and stuff it, with herbs. Brown it first and then put it in a heavy pan for a somewhat dry roast. Put some carrots and onions below it and a bit of red wine. Cover and bake.

I would put it in at about 350 for 20 minutes per pound. Check with an instant read to see if it is done to your liking. My post above gives instructions as to covering. This is a tasty bit of flesh so it doesn't need much, the pan juices can be thickened with a roux made from flour an oil if you prefer a heavy gravy rather than just the cooking juices. Don't over cook it will become stringy.

I basically do what MagentaY does but add crushed garlic, pepper, and a little oil. You can use what you use to brown roast in or, if you prefer, you can start roast off by broiling for a few minutes on each side instead of browning in a pan. If you do that, put a little oil on top when you go to the roast/bake stage.
