I never heard of these types of kugels.

I'm sure you know that you can make your own homemade chrain with the marror.

Many people will eat the charoses with some matzah.

I googled maror (horseradish) recipes and found this. I would change it a little. Leave out the cheese and use potato starch or matzhah meal instead of panko crumbs.

We make our charollete from dates.
With the leftovers I make date truffles.
I add cocoa to the mix and then dip them in coconut, crushed almonds, and cinnamon.

I would love the recipe for maror crusted roast.

Horseradish Crusted Roast
5-6 lb. standing rib roast
1/4-1/2 cup marror
20 garlic cloves, crushed
1/4 cup olive oil
black pepper

Preheat oven to 425 F.
Combine all ingredients and rub all over roast.
Arrange the roast in a pan, bone side down, and bake for 25. Lower heat to 350 F and continue baking until desired doneness.

Charoset Matza Kugel
3 matzos, broken into bite size pieces (about 1" square)
1 cup water
1/4 cup oil
2 sweet apples, peeled and halved
4 eggs
1/4 teaspoon salt
3 Tbsp + 2 tsp sugar, divided
3/4 cup charoset
2 tsp orange zest
1 tsp cinnamon, divided
silan or charoset sauce (optional)
walnut pieces (optional)

Preheat the oven to 350 degrees. Grease a 2-quart casserole pan.
Place matzos pieces in a large bowl and add the water. Let stand, stirring occasionally, until softened, about 5 minutes.
Cut each apple half lengthwise in three, and slice them crosswise as thin as possible.
In a large bowl, whisk the eggs with the salt and 3 tablespoons of the sugar. Add the charoset and whisk until it is blended in. Whisk in the grated orange zest and half teaspoon of the cinnamon. Stir in the apple pieces.
If there is any water left in the bowl of matzos, drain it. Stir the matzo pieces and oil into the kugel mixture. Spoon the mixture into the casserole dish.
Mix the remaining 2 teaspoons sugar with the remaining half teaspoon cinnamon. Sprinkle the cinnamon-sugar mixture evenly over the kugel.
8. Cover the kugel and bake for 20 minutes. Uncover and continue baking the kugel until it is browned and firm, about 10 minutes. Serve it warm.
If you like, spoon a little silan or haroset sauce next to each serving and top the syrup or sauce with walnut pieces.

Someone sent them to me online:

charoset kugel: chop apples and dates. toss with 1 T potato starch, 2 T cinnamon and 1/4 c. sweet red wine. pour into baking dish. in a seperate bowl, make a slurry using: 2T potato starch with 1/2 c. water OR 2 T tapioca starch with 1/2 C. water OR 1/2 c. almond/coconut flour with 1/2 c. water. Add 3 eggs, 1/2 c. sugar and 1/4 c. oil to the slurry. pour over apple-date mix. Make crunch topping using 1 c. ground walnuts, 1/4 c. potato starch, 1 tsp. cinnamon, 1/2 c. brown sugar an 1/4 c. white sugar. mix well and drizzle in up to 1/3 c. oil (should be lie coarse sand). sprinkle oer kugel and bake at 350 for 45 minutes

marror kugel: add 1/2"-1" pc horseradish root to 1 lb potato. shredd or kugel blade together with 1 small onion for kugel. for every 5 lbs potato/horseradish mix, add 1/2 c. oil, 2 egg, 1 T salt, 2 T sugar and a pinch of vinegar (a dribble) - mix and bake like potato kugel!
