Need recipe that will keep roast moist. Any ideas??

Insert some garlic and rosemary into it. Brown it and then braise it in some red wine with or without tomatoes.

I wrap it in three layers of tinfoil, right-angled, and closed up well, with spices on it, and roast at 400 F for three hours. It stays moist.
I pat it dry with a paper towel first, but you probably don't have to. I don't open the oven the whole time.
That's the whole story.
