I have lots of leftover potato bourekas from purim. We've been eating them plain and with mushroom sauce. ... any other ideas?

I'm not into spinach myself - but you can make something with spinach to vary the taste as it goes well with potatoes

I'm Sephardi and know a thing or two about bourekasim. We never serve them with sauce, it just sounds weird. It's not egg rolls.

My favorite universal sauce that I play around with. Its lots of onions, celery, garlic, and mushrooms. With these veggies I play around with more or less celery or onions depending on my mood. I've made it without the mushrooms, without the celery. I use it a lot and its delicious. Recently used it for mini potato blintzes
