Are you looking for a 4 quart crockpot or 6 quart? How many people do you serve?

is that 6 adults? 5 quart sounds like the size for you.
You need a crock pot with a manual knob, no automatic shut off, and oval shape will allow for more even cooking as well as a larger surface for you to make other foods in there besides for cholent.
Best companies out there with these features for a quality cock pot are hamilton beach, rival, crock pot.

When I was first married I had a rival. I honestly don't think it was that great. One day it just stopped working.

I then got a magic mill. It was better than the rival. One day one of the handles came apart while the crock pot was on. Then finally one day it caught fire, and that was the end of it.

Now I have a pro chef, and it's been great so far. It looks exactly the same as the magic mill, the insert fits, so now I have a spare.

I was told that they are all the same pretty much and made in China.

I like my Rival Smart Pot. It turns itself down from High, then, it stays on Keep Warm forever. It's Keep Warm is a light simmer. The regulations require that, so the food stays safe for a long time, I hear.

Spend on the high side, I would say.

No extension cords, or a Heavy Duty one if you must, never a normal weight one. But none at all is best.

what is most important to look for is a control dial with varying temperatures ... not one with a low/med/high

I've had a Proctor Silex (I think made by Hamilton Beach) for 10 years. Nothing fancy about it at all. Never once had an issue with it.
