What can I make with thin chicken breast for Friday night? I don't want to do shnitzel. Any recipes with a sauce I can bake it on the oven with? Something that won't dry out on the blech...

If you have pastrami you can make chicken roll-ups- very easy and pretty too. Lay the pastrami flat on the chicken and roll jelly roll-style, pinning it together with a toothpick. Mix equal parts ketchup, mayo, and duck sauce and pour the sauce over the chicken. Bake covered around half hour-45 minutes and then uncover (sorry, I'm terrible with chicken baking times).

try not to over cook it from the getgo - then the blech won't burn it or dry it out ...
a simple grill with olive oil, garlic, pepper & rosemary
