Hey,
I just got back from our Health Food Store, and got these great little beans called "Azuki Beans".
I'm not quite sure what to make out of them... I was thinking perhaps to make a baked-beans recipe with them and serve that over rice...
Have any of you ever made homemade baked-beans?
Do you have any other ideas what I can make with these Azuki beans?

Ok...
So, I ended up making the Baked-Beans recipe with the beans, and served over Rice with Melted Cheese on top.......... YUMMMMMMMMMMMMM!!!!!
My kids and DH LOVED it!!!!
It was SO easy!!!
I just boiled the beans (they're so tiny, so they cooked really fast),
then I made a sauce for them: Saute'd Onions, Brown Sugar, Ketchup, Mustard and spices.
Poured it over the beans and let it cook in it for a while.
In a separate pot I cooked the Rice. and when served in individual bowls, sprinkled grated cheese on top....)
Highly Recommended!!!
