Not sure your budget and/or if he'd appreciate something creative but I'm making an illustrated book this year imh. Haven't done my research yet but createspace seems like the best option.

I'm using a story he wrote but your options are endless. You can be funny or sweet or a combination of the two.
You can illustrate a song you both like, do a parody of a book he enjoys, write the story of your relationship, write a poem, list reasons you love him, etc.
If you have kids you can have them each add a page.
