I'm looking for recipes that can be frozen. We use almost nothing!! No gebrokts, no potato starch, no spices besides salt! Are there any good chicken cutlets or chicken recipes that I can make raw in advance and freeze?
Any other recipes are also appreciated. I'm guessing there are no cakes or cookies I can make using my limitations...

You can make delicious almond cookies, meringues, coconut cookies. If you can use 2 tbsp cocoa I have a sweet potato cake recipe too.
Egg noodle blintz leaves made with ground almonds, potato sweet potatoes or vegetable blintzes, mashed potatoes, potato kugel, sweet potato kugel soufle, cucumber salad (I know people who freeze certain recipes), almond crusted chicken cutlets, almond "kneidlach", par-grilled chicken cutlets, meatballs in carrot sauce, shepherd's pie, two tone meatroll, meatloaf, pepper steak, minute steak, roast beef, lemon ices, lemon ice cream, fried eggplant with scoops of mashed potatoes

coat chicken cutlets in wine, eggs mixed with little salt & ground nuts.

cook diced apples over medium flame with lemon juice & sugar (recipe from pesach cookbook) for delicious jam!

meat loaf can be frozen (put sm. potato pieces in place of bread crumbs)

do you use ground nuts?

I coat cutlets with grounds nuts, salt (& pepper).

Most of my cakes are made with ground nuts (not potato starch)

I also make mock liver with sauteed onions, chopped eggs, ground nuts and salt.

There is also parve ice cream made out of eggs, sugar, cocoa and vanilla sugar and slush ices made with grape juice, lemon juice, sugar and water....

Steam butternut squash and whip it with a little salt, maybe some cooked apple for a sweeter taste, and salt.

ooooooooh I want all the above recipes!
I pour Grape Juice over chicken and bake, last 15 minutes uncovered, it is the best chicken.
You can make duck sauce out of orange juice etc. (thanks Ra mom for the recipe!) I omit the potato starch
tri colored chips made out of beets, sweet potatoes and potatoes (thanks to someone on imamother)
nut cake
nut brittle (kind of candy to nosh on)
lots of carrot, cucumber and beet salad.
Poached salmon
mashed potatoes
potatoe blintzes in egg crepe
meringues
lemon sorbet
all types of fruit sorbet layer them and then cut them into squares for a fancy dessert
roasted veggies
zuchinni sticks
saute julliened carrots and zuchinni with some onion

here are a whole bunch of recipes posted by someone on another group I am in. The look great.

Pesach Tomato Sauce
1 case of RIPE roma tomatos
2 red peppers
2-4 jalapeno peppers
1 large spanish onion
1 cup merlot wine
1 tablespoon salt (add more to your taste)
1/2 cup sugar
Dice onion and place with some salt in a thick heavy duty bottomed pot (I use a cuisinart pot). Saute. In the meantime, cut off tops of tomatos and squeeze out the seeds and middle part. Puree in food processor and add to the pot with wine.
Cook for 2 hours, uncovered and simmering (between med and low).
Then add chopped red peppers, chopped jalapeno and seeds.
Cook another 2 hours until total left is under 2/3 of what you started with.
Then add sugar and salt to taste.
Puree with hand blender until completely smooth.
Cool and store in baggies or containers in the freezer.



Tongue
Two tongues cooked and sliced-peel while still warm
1 bottle of wine
2 big Vidalia onions with salt sautéed until caramelized (use a bit of sugar to help carmelize)
Place sliced tongue in pan, cover with carmelized onions, sprinkle salt and pour wine to almost cover.
I freeze it like this and reheat at 300 degrees for 6+ hours.
Lemon Chicken
2 cut up chickens
Salt
1 cups sugar
½ cup lemon juice
½ cup white wine or water
Cook chicken in oven with salt for 45 min. Meanwhile, place sugar in non-stick frying pan and cook over low heat. When dissolved and colour starts to get slightly brown, add lemon juice and continue cooking a few minutes into syrup. Remove chicken from oven and drain excess liquid. Pour lemon sauce over chicken and continue to bake for 45 minutes.



Fried Onion Chicken
2 Chickens cut in 1/8th
Fried onions
Add orange juice to onions til combined
Salt on chicken and top with mixture
Bake open at 350 for 75 minutes
Hawaiian Chicken
3 chickens, cut up
2 small containers tomato sauce-add jalapeno and cook for a few minutes
1 pineapple cut in small chunks
Salt to taste
Cook chicken in oven with salt for 45 min. Drain excess liquid. Pour other ingredients over chicken and bake another 45 minutes.

Fruity Chicken
2 cut chickens
2 medium onions – fried till brown
juice of 2 lemons (6 tablespoons)
juice of 1 orange
3-4 tablespoons water
1 teaspoon salt
Place chickens in pan. Dice onions and sprinkle over chicken. Squeeze fruit juices and mix together. Add water and salt and pour over chickens. Bake at 350° for 2 hours.



Chicken balls (for soup-instead of matzah balls)
4 breasts
2 eggs
2 small potatoes
salt
Blend together in food processor and let sit in fridge for one hour. Drop into boiling water and cook for 1 hour.

Ratatouille
3 eggplant
10 zuccini
1 viladia onion
2 red pepper
2 large tomatos
2 jalapeno including seeds
3 small tomato sauce
Sugar water
Salt

Sweet and Sour sauce
½ cup red cooking wine
¼ cup sugar
1 cup orange juice
Bring to a boil, and pour over the chicken nuggets, or use as a dipping sauce.
Note: Use this mixture whenever sweet and sour sauce is called for.


Apple Cake
3 apples - use tart apples for better taste - peeled, chopped and cored
2 tablespoons lemon juice
2 teaspoons sugar
8 eggs
325g ground almonds (11.5oz)
275g sugar (10oz)
Place the apples, 1 tablespoon of the lemon juice and sugar in a saucepan and gently heat until the apples turn to mush. This should take about 10 minutes with the lid on.
Pour the eggs, ground almonds and sugar into a food processor or large bowl, add the cooled apples and blitz until well combined - scrape this into a pan lined with parchment paper and bake in the oven at 350 for 45mins or until golden and risen.

Candied almonds
2 cups sugar
1 cup water
3 cups almonds
Cook on low-med until melted and bubbling. Take off heat and mix in nuts. Spread in pan and crush after it hardens.


Almond Milk
1 cup raw almonds
2 cups water, plus more for soaking
Equipment
Bowls
Strainer
Measuring cup
Blender or food processor
Fine-mesh nut bag or cheese cloth
Instructions
Soak the almonds overnight or up to 2 days. Place the almonds in a bowl and cover with about an inch of water. They will plump as they absorb water. Let stand, uncovered, overnight or up to 2 days. The longer the almonds soak, the creamier the almond milk.
Drain and rinse the almonds. Drain the almonds from their soaking water and rinse them thoroughly under cool running water. At this point, the almonds should feel a little squishy if you pinch them.
Combine the almonds and water in a blender. Place the almonds in the blender and cover with 2 cups of water.
Blend at the highest speed for 2 minutes. Pulse the blender a few times to break up the almonds, then blend continuously for two minutes. The almonds should be broken down into a very fine meal and the water should be white and opaque. (If using a food processor, process for 4 minutes total, pausing to scrape down the sides halfway through.)
Strain the almonds. Line the strainer with cheese cloth and place over a dish. Pour the almond mixture into the strainer.
Press all the almond milk from the almond meal. Gather the cheese cloth around the almond meal and twist close. Squeeze and press with clean hands to extract as much almond milk as possible. You should get about 2 cups.
Refrigerate almond milk. Store the almond milk in sealed containers in the fridge for up to two days or freeze.


Veggie Quiche
3 peeled zucchini sliced
2 peeled carrots sliced
1 onion diced
1 peeled red pepper diced
½ cup almond milk
6 eggs
1 teaspoon salt
Fry veggies in non-stick pan with 1 tsp. schmaltz, until slightly softened.
Combine with remaining ingredients and pour into pan that has been lined with parchment paper.
Bake at 350 for up to 1 hour until golden brown.
Variation: Add thinly sliced sweet potato or regular potatos to veggie mixture.


Fruit Roll Ups
Puree mango in food processor
Spread on silpat
Dry out in the oven for 4 hours at 175 in oven
Turn out onto parchment paper and cut across and roll up!
Hatzlacha and have fun cooking!!

You can make your own potato starch!! You'll be able to make a lot more things!

We don't use any processed products and had a blast making various fruit leathers this past year- with strawberries, mango, kiwi, and anything else we could get out hands on. Put in oven at like 225 for a few hours on wax paper and roll up and cut into strips. Yum.

I also make apple crumble with cut up apples, sugar, a tiny bit of lemon juice, and a few strawberries- that's on bottom and I crumble a mix of ground nuts, sugar, and egg, kind of drizzle it on top like I would do w a regular oatmeal crumble. Bake at like 350 in a 9x13 for like 30-40 minutes and serve w pesach lemon ice cream (don't have recipe handy but it involves beaten egg whites, sugar, lemon juice added to yolks and combined)

I make chicken cutlets dipped in potato kugel mixture. You need to grind the mixture not shred... It really is yummy
