I made an orange sponge cake with eggs, potato starch etc but no matzo meal or ground nuts. It looked amazing in the oven- like it had really risen well but as I took it out the oven, it kind of sunk down and flopped. Does anyone have any tips on how to avoid this or any totally foolproof using mainly eggs and potato starch?

Was it a tested recipe or was potato starch kjust subbed for flour?

Take the cake from oven to freezer and turn upside down. It won't fall. Will stay high. Not the most conventional method but u do what works. It works trust me.

Do you mean as soon as the cake comes out the oven I should put it upside down (in the container) straight in the freezer?

First of all, make sure that:
1) you didn't beat the egg white too long (they should form soft peaks but not be dry)
2) you folded the whites & yolks mixtures together careful to not deflate the whites
When you remove it from the oven, invert it -- many pans have little legs you can use -- I like to raise it higher by putting on a a bottle (a 750 ml wine bottle works well). Leave it that way until it is totally cool and then remove from the pan.
