My dh family has a minhag not to use squash on pesach. I searched for veggi patties or kugel recipes and all Of them call for squash. I know I can omit the squash but I'm not sure how it will effect the taste. Any recipes would be appreciated. As well as fillings for veggi blitzes. Thank you
