3 cups confectioner's sugar
1 tbsp. vanilla sugar
2/3 cup cocoa
1/8 tsp. salt
½ cup egg whites (approx. 3 eggs, but must be measured)
1½ cups chocolate chips
Preheat oven to 350. Line 2 cookie sheets with parchment.
In a bowl, whisk together sugars, cocoa and salt. Add 2/3 of egg whites. Mix. Add remaining egg whites and mix until combined. Batter should be thick and glossy. Stir in chips.
Drop spoonfuls of batter onto cookie sheets about 5 cookies per sheet (note: I put them much closer -- around 10-12 per sheet and it was okay). They spread while baking.
Bake for 12-14 minutes until tops look lightly cracked.
Cool completely on baking sheet. Do not move them until cool. Freezes well.

Do you think these could be made without choc. Chips? Like is there something I can substitute? We don't use choc. Chips.

I think you would be okay leaving out the chips totally.

I find that by the time it's mixed well the batter is glossy. But, yes, I'd mix until it looks glossy.

BEST KLP cookie ever! I'm serving it one day for dessert with pareve vanilla ice cream on top.
One of my non-Jewish co-workers remembered it from last year when I brought it in on Chol Hamoed and gave her one (she asked!) and she asked me if I'm making it again and if I could bring one in for her. THAT'S how awesome this recipe is.....

No, just mix everything in a bowl by hand. Super easy.

They're pretty flat- as in, you spoon them onto the cookie sheet and they'll spread out and flatten. Like a cookie

They come out flat; it seems to me that's how they're supposed to come out. They also spread a lot.
