I know this sounds weird - my mother used to make a veal roast that was a veal roast and it was basically cooked in borscht - with maybe one or two other ingredients. Does anyone know of this recipe?

I winged it - It came out AWESOME. If anyone is interested, I can post the recipe I invented.

Let the 3 lb veal roast come to room temperature.
Dice a whole bunch of onions. Put in bottom of pan with about a TBSP of margarine AND a tbsp of olive oil.
Preheat oven to 375. Let the onions carmelize in bottom of pan (it took like 10-15 minutes)
When onions are brownish, let cool.
Sprinkle kosher salt and pepper on the veal. Use the (hopefully now cooled onions) and oil to smear the salt and pepper into the veal.
Put the veal in the oven and brown on 375 (I put it in for like 10 min per side, I only browned on 2 sides)
Pour the jar of borscht over the veal. Cover tightly with foil. Bake at 375 for appx. 20 min per lb of veal.
It was AWESOME. My kids each had a slice last night and they loved it.
