ISO pesach pancakes no mixer

I dont have a mixer. I s there any recipe for pancakes without whipping eggs? can be gebrokts....

Matza Meal Latkes

1 cup milk
1 cup matza meal
4 eggs
sugar or salt to taste (depending if you want it sweet or not)
oil to fry

Mix 1st 4 ingredients. Let sit 5 minutes to thicken, then add a little more milk if necessary to make proper consistency.

Fry over medium heat until browned and turn to cook other side.

Our family always served them with grape jam, but anything goes; jam or jelly, syrup, sprinkled with cinnamon sugar, etc.

You can do this with a fork instead of a mixer, too.

1/2 cup matza cake meal
1/2 cup potato flour
2 teaspoons baking powder
2 Tablespoons sugar
pinch of salt
1 cup milk
1 teaspoon vanilla
2 Tablespoons oil
2 eggs
Mix all ingredients, except for the eggs. Separately, beat eggs with mixer and then add to other ingredients and mix with mixer.

This is easy and yummy, but it only makes one pancake at a time.

1 tblspn matza meal
1 tablspn sugar
1 egg
optional 1/3 tspn baking soda (I left this out)

Beat the egg white and sugar with a fork. Mix together the other ingredients in a separate bowl. Mix all ingredients together. Fry over medium heat about 3 minutes per side.

I sprinkled with cinnamon and sugar and even my pickest kids are a ton.
