We are in the process of baking challah for "Shlissel Shabbos." Would challah dough be okay to leave out overnight on the counter if we will not be shaping it till the morning, or must it be refrigerated?

Refrigerate it. Hopefully you haven't let it rise yet. Allow it to do so slowly in the fridge

no, you have to refrigerate. if you leave it on the counter it will be overrisen and sour. in the fridge it will rise slowly and be ok.
