Parmesan cheese

Does it need to be kept in the fridge?
If it was out for 2 weeks is it spoiled? Do I need to throw it out?

I keep parm around after it gets hard. Sometimes I buy a special piece and just wrap it in wax paper loosely for it to dry out and harden, the flavor gets deeper and more nuttier.

hard cheese can be left out, it just gets better. Cottage cheese and cream cheese would go off. Camembert, parmesan, cheddar are best served at room temperature. If left out for a bit the taste sharpens as it ages. keep it covered so it wont dry out though. A white film is normal and yummy. It's cheese, so blue spots are not necessarily a problem.
Cheese is so forgiving.

Interesting question. I didn't know the answer so I googled it.
Here is one of the answers, from the Huffington Post, that I found (I read others too and all concurred that a cut hunk of Parmesan belongs in the fridge.):

"Yes, you should always refrigerate your Parmesan. Big wheels of Parmesan and large chunks of the stuff -- like what you see on display at stores -- don't have to be refrigerated thanks to Parmesan's low moisture content, which makes it less susceptible to bad bacteria. In addition, Parmesan contains a pH level of around 5.2-5.3 from leftover lactic acid, and that acidity helps kill harmful bacteria. BUT the size of Parmesan that you bring home is much smaller, and has much more surface area, making it more susceptible to grow the bad stuff. And it's just not worth the risk."

I worked in supermarket for years, we put the big wheels of cheese and cut chunks in fridge every night even though they were out all day long on display table. I don't think leaving it out constantly would be good, or else why would stores put it away at night?
