I don't think they follow one specific recipe. I think these cakes are being baked privately in peoples' homes.

(Yes, I know it's an old thread, but legitimately bumped.)
A few months ago Family First had an article about Bikur Cholim with one or two recipes. If this is the same Bikur Cholim a lot, if not everything, is baked in the Bikur Cholim kitchen.

what would you change to make it marble? the recipe only has a sponge cake.

The Voice of Lakewood had a terrific sponge cake recipe last week. I made it and it came out similar to the Satmar BC marble cake-just plain white. It has instructions for converting it to marble, and I plan to try it this week. (You can get the Voice on line-google it.)

Reserve 3/4 - 1 cup batter, add 2 tablespoons cocoa and mix until incorporated. Marbelize.

Yup. I only nibbled at the edges though because I froze it for Yom Tov. (Also because I am supposed to going on a diet )

I used to make marble cake for them as a bored teenager, it's from private people. This is the Recipe I used:
14 eggs separated
2 1/2 cups sugar
1/2 cup oil
1/2 cup orange juice
2 vanilla sugar
3 cup flour
2 tspn baking powder
Directions: beat egg whites until forms Peaks then add rest of the ingredients Flour last for the better into a 9x13 baking pan leave one cup in mixer.
Dilute the following in a1/4 cup hot water:
3 tbsp cocoa
1 tbsp coffee
1/2 cup sugar
Add to remaining batter, mix and pour ziggzaggy over batter already in baking pan. Marble slightly with fork
Bake in 350 f for hour and 15 min
