We have a ton and ton of lady fingers that we can't possible finish. Does anyone have any recipes that uses them so we can finish them up? Thanx! (non- gebroks please)

My neighbor uses them as an occasional matzah alternative... to make little sandwiches with chocolate spread, cream cheese or jam.... never tried it though.

Line a 9x13 pan with lady fingers.
Drizzle instant coffee over them
Frost with riches whip
Sprinkle cinnamon

Repeat

Here you go:

1 cup sugar
1 cup brown sugar
1 tsp. baking powder
1 tbsp. vanilla sugar
1 cup oil
4 eggs
1 cup potato starch

mix everything together, pour into greased 9 " 13 pan. Bake uncovered on 350 for 20 minutes, then take out of oven, and put on crumb topping:

Crumb Topping:
2 tsp cinnamon
4 tbsp (1/2 stick) margarine
8 oz. box lady fingers (you can even put more)
1/4 cup brown sugar
1/4 cup white sugar

mash everything together, and pour on top of cake. Bake another 35 minutes.

This cake is amaaazing! Enjoy:)

I made the tiramisu from dining in on pesach & it was really good! I left out the coffee in the chocolate cream. There are two layers of ladyfingers.

I just figured out how to take my lady fingers out of a two-pound box.

There are 8 lady fingers in each serving and there are 39 servings in a two-pound box.

Multiply 8 x 39 = 312.

There are 2 pounds in this box. This means that there are 4 of "8 oz boxes".

Divided 312 fingers / 4 boxes = 78 lady fingers in every 8 oz box

Since recipe calls for half a box, you divide 78 fingers / 2 = 39 fingers.

Tiramasu is actually made with Italian ladyfingers which are quite a bit harder than the ladyfingers which are sold in US markets and bakeries. The soft ladyfingers fall apart when soaked. You could try to achieve the same results by leaving the ladyfingers out to get slightly stale and harden a bit.

I've seen "regular" ladyfingers" used in trifles - again slightly stale is best so that they don't completely fall apart when they absorb the liquid. Trifles are quite easy and impressive - especially when layered in a beautiful glass bowl so that people can see before they dig in :-) Trifles are also a good way to use up any kind of stale cake. I made a ginger trifle with a ginger cake that was devoured when I brought it to a party. It was incredibly easy since it was just cut up stale cake (actually mine was a cake that had kind of flopped and broken when I took it out of the pan); a pudding and some whipped cream folded together. But there are some lovely ones that use strawberries that are gorgeous to look at.

Here's a recipe for the traditional tiramasu - traditionally they are made with mascarpone cheese. If you can't find it, it's not that hard to make a pretty good version since it's essentially "soured" heavy cream.

The Best Tiramisu You Will Ever Make


Serves: 9
Ingredients
6 egg yolks
1 cup sugar
1¼ cup mascarpone cheese
1¾ cup heavy whipping cream
2 -7oz packages Italian Lady fingers
1 cup cold espresso
½ cup coffee flavored Liqueur (optional)
1 tbsp cocoa for dusting

Instructions
Combine egg yolks and sugar in the top of a double boiler, over boiling water. Reduce heat to low, and cook for about 10 minutes, stirring constantly. This is your sabayon, remove from the heat and whip yolks until thick and lemon colored.
Add Mascarpone to whipped yolks, beat until combined.
In a separate bowl, whip cream to stiff peaks.
Gently fold the whipped cream in the mascarpone sabayon mixture and set aside.
Mix the cold espresso with the coffee liquor and dip the lady fingers into the mixture just long enough to get them wet, do not soak them!
Arrange the lady fingers in the bottom of a 9 inch square baking dish (or container similarly sized)
Spoon half the mascarpone cream filling over the lady fingers.
Repeat process with another layer of lady fingers and cream.
Refrigerate 4 hours or overnight.
Dust with cocoa before serving
