this recipe is from Susie Fishbein's "The Kosher Palette." I have tried many chocolate cake recipes, and this one is by far the best. moist and delicious, and easy, too! (it's in my oven now baking for shabbos!) Smile

2 c sugar......................................... 1 c non-dairy creamer or milk
1 3/4 all purpose flour........................(I always use soy milk)
3/4 c cocoa........................................1/2 c vegetable oil
1 1/2 tsp baking soda.......................... 2 tsp vanilla extract
1 1/2 tsp baking powder........................ 2 eggs, beaten
1 tsp salt .............................................1 c boiling water

pre-heat oven to 350. grease and flour pan of your choice: one 9 x 13, two 8 inch round or square pans, one bundt pan (I always use a 9 x 13).

combine dry ingredients in a bowl, add liquids, mix mix mix!!! pour into your prepared pan(s) and bake for 25 - 50 mins (until fork comes out clean). I always have to bake it for around an hour.

yummy!

although I just noticed that chani posted this exact cake recipe a while ago and she got the recipe from the back of a hershey's cocoa box!!! Rolling Laughter I wonder if that's where susie fishbeing got HER recipe from???

chani also posted a frosting recipe for the cake, here it is:

1 stick margarine
2/3 c. cocoa
3 c. powdered sugar
1/3 c. milk (Coffee rich)
1 tsp. vanilla extract

melt margarine. Stir in cocoa. alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Add more milk if necessary ( I didn't). Stir in vanilla. Makes about 2 c. of frosting.

this is the best chocolate cake I have ever made!
I actually can mix it all in one bowl with my hands! (except the boiling water) I put it in 2, 9 inch rounds at it bakes for 35-40 minutes

thats the hershey recipe. it is good. I add 1/4 cup flour if I use it as a decorated cake. its a bit stiffer but just as moist!

and the frosting on the back of hershey sis also a mazing. don't skimp on the salt!

micki - I am planning on making the frosting since I saw it on chani's thread. you mentioned "don't skimp on the salt." was there salt in the frosting or am I misunderstanding you?

I know this is a really old thread, but I searched for a chocolate cake and decided to try this. It's AMAZING (and the frosting too!). I am an awful baker but managed to get this right Smile Highly recommended!
