Another question - What if it's a warm night? I wouldn't leave sour cream or cream cheese out of the fridge alll night.

Do it during the day for shorter. I wouldn't do less than 6 hours, but it might be fine. I just have a weird block in my head that it must be at least 6 hours.
Just like I have a block against using the 9% or 27% it may be irrational.

I do white cheese overnight, suspended over my milchig sink (in a sock) and it doesn't spoil. Nights here are usually not so hot.
