You can always google. But even if you did you might not get my reference. She has a weekly food show on NPR (which I don't have reception for in the house, but if I'm in the car that hour on Sunday I'll be listening, she's fun) and I first heard of the three ingredient challenge there. I don't remember her parameters.

Instead of baby eggplant I use the bottom 1/3 of chinese eggplant, the long skinny eggplants, they are not bitter. The top 2/3 I slice and grill for salad.

After you sautée the eggplant you put it in a pan and bake it with seasoned chicken. Season chicken pieces with all spice, garlic, cinnamon, salt and pepper.
Bake for 1 hr covered. Then add 1 cup of water cover and bake for another hour.

I can't stand the tone of her voice but she was my inspiration for this thread. Lot's of nights I forget to defrost something and it's a matter of playing the game with the contents of my fridge.

If by rice sticks you mean rice noodles I would make
Cumin chickpea with spicy rice noodles

That looks great.

I ended up making shepherds pie with my meat and potatoes. I will save the aubergines for shabbos.

My DD makes something else with eggplant and ground beef. It's like moussaka, but Syrian style
Slice chinese eggplant, drizzle or spray with oil and put them under the broiler to "oven fry"
Sautée ground beef with all spice, cinnamon, salt and pepper. Drain off excess liquid (same filling like kibbeh)
Let meat cool. Once meat has cooled add a beaten egg to cooked meat
Take a pan and layer eggplant, meat, eggplant, meat, eggplant.
Sprinkle top with allspice and cinnamon.
Bake covered for 30-45 min at 350, until flavors mingle.

Oh sorry I didn't see your post, I would make my easy chicken cassorole. And add peas.
Rice, chicken, carrot, peas, tumeric,salt, water. Mix all ingredients. Bake at 350 for 1-1 1/2 hours covered tightly. Remove cover and bake until chicken has a little color (optional)

I love this game.

How about
