I'm pregnant and stuffing my freezer full of food for when the baby comes. I'm looking for chicken marinade recipes that I can prepare the marinade, put the marinade and raw chicken into a ziplock, and freeze. Then I can pull out the ziplock the day before, defrost in the fridge, dump all the contents into a foil pan, and pop it into the oven.

I'm also in Israel, so if you know of stuff with local ingredients (duck sauce is hard to find/expensive here, so that's not an option for me) that's even better.

I've done honey mustard, garlic lemon, garlic mustard, and balsamic marinades so far, but I'm running out of ideas...

I generally grill but I am sure the results would be delicious baked. This is one of my favorite chicken recipes - easy and very flavorful.

Unbelievable Chicken
--------------------------------------------------------------------------------

Serving Size: 6

Ingredients:

1/4 cup cider vinegar
3 tablespoons prepared coarse-ground mustard
3 cloves garlic, peeled and minced
1 lime, juiced
1/2 lemon, juiced
1/2 cup brown sugar
1 1/2 teaspoons salt
ground black pepper to taste
6 tablespoons olive oil
6 skinless, boneless chicken breast halves

Directions:

1. In a large glass bowl, mix the cider vinegar, mustard, garlic, lime juice, lemon juice, brown sugar, salt, and pepper. Whisk in the olive oil. Place chicken in the mixture. Cover, and marinate 8 hours, or overnight.

2. Preheat an outdoor grill for high heat.

3. Lightly oil the grill grate. Place chicken on the prepared grill, and cook 6 to 8 minutes per side, until juices run clear. Discard marinade.

Classic grilled chicken:
1 crushed garlic
1 teaspoon oregano
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste

Equal parts honey and soy, crushed garlic, salt, olive oil, a bit of vinegar, a bit of mustard.

Honey and mustard, but dip into breadcrumbs to coat, spray with oil and bake.

Equal parts ketchup, mayo and apricot jam, to bake covered.

You could omit the glaze on the warm chicken - or prepare and freeze if you want to take the extra step.

Raspberry Mint Chicken
--------------------------------------------------------------------------------

Recipe By:
Serving Size: 8

Ingredients:

2 Chickens
1/2 teaspoon salt
1/4 teaspoons pepper
Marinade:
1/2 cup Kedem's raspberry syrup
1/2 cup balsamic vinegar
1/2 cup apple cider vinegar
1/2 cup olive oil
1 tablespoon minced garlic
2 tablespoon fresh mint, julienned
1 tablespoon fresh parsley, finely chopped
1/2 cup chicken broth

Glaze:

1/4 cup raspberry syrup
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon apple cider vinegar
2 teaspoons lemon zest
1 tablespoon lemon juice
Garnish:
2 tablespoons mint, fine julienne

Directions:

Cut chicken into pieces and set trimmings aside for soup. Season with salt and pepper. Place into a 2 gallon plastic bag or large bowl.

Prepare marinade: Mince garlic and julienne mint (roll leaves and slice across the roll very thinly). Combine remaining marinade ingredients. Pour over chicken and toss. Cover and refrigerate at least 8 hours or overnight.

Preheat oven to 375'.

Remove chicken from the refrigerator. Prepare a shallow baking pan by lining with foil. Arrange chicken onto baking pan and discard remaining marinade. Place pan into the oven and bake for about 40 minutes or until 165' and golden brown. I like to pour off some of the liquid midway through the baking.

Make the glaze by combining the remaining ingredients in a small saucepan. Simmer to reduce by 50%. Put the chicken onto the serving platter and brush the glaze over the warm chicken. Garnish with mint. Serve.

Just made this and it was fabulous. Thank again for a great dinner, Amarante!

Glad you enjoyed it. It's one of my favorite recipes and the results are disproportionate to the ease of preparation.

Make a schwarma spice marinade.

Use an awesome spice rub and add olive oil and a touch of lemon or vinegar.

Pesto inspired marinade using herbs, garlic and olive oil.

Tomato sauce, honey and seasonings.

Soy sauce, honey, oil.

Zaatar marinade.

I love these ideas
I think it’s so smart to prep chicken before freezing
I know it’s an old thread, but if anyone has something new to add it’s a great idea.

Teriyaki (honey/soy)
Shwarma seasoning with added garlic and salt
Barbecue spice rub (something smokey)
Herb marinade (olive oil, fresh garlic and choice of herbs)
Beer brined

How many do you need? Maybe make doubles of the ones you know your family likes.

I bought Braggs ginger sesame dressing because it was BOGO free.
Didn’t really like it for salads but makes a great marinate
I added 1 tsp of sesame oil, fresh garlic, and a little extra grated ginger.

I also like using Italian dressing
