I'm looking for a good rice and bean recipe possibly with tacos. Anyone have?

I don't have any recipes, I usually just make a box of near east spanish rice. I drain and rinse a can of black beans and sautée it with an onion and some spices. You can add it to a taco, or I serve it alongside taquitos- I take a corn tortilla (micriwave corn tortillas for 30 seconds first- they roll better and don't break when they are warm) put a spoonful of soy meat inside (trader joes), roll it up, and fry it in a little oil seam side down. Flip after a minute or so when it's browned. Serve with guacamole on top. Yum.

I like to make taco bowls. I use this as a guide but when I am making milchig I sub the chicken for veggies such as mushrooms, sweet potato, corn, sauteed peppers and onion. Whatever I have in the fridge.

I make this all the time:
saute onion and garlic
add 1 t each of: paprika, turmeric, cumin, chili powder, garam masala
add one can of cubed tomatoes
add one can of garbanzo beans
simmer partially covered for 20 minutes. serve over rice or inside a tortilla
the spices are perfect and delicious!

2cups cooked brown rice or pearl barley (I prefer the barley)
2 cups cooked black beans
green onions
minced peppers
salsa
finely minced garlic
fresh or frozen corn
I mix all of the above together with a bit of EVOO and add some salsa. You can vary the veggies. Right now I have zucchini so I'll mince and add it as well. A bunch of chopped cilantro is also a great addition.
