Very easy and just adjust level of spice by the salsa as mild salsa is not spicy at all.

You can use any kind of tortilla - flour, corn or whole wheat if you can find it.

I'm lazy so I line my sheet pan with tinfoil to make clean up easier. Very Happy

Sheet Pan Chicken Fajita

Serves 4-6

1 pound chicken breasts, cut into strips
1 yellow onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
3 garlic cloves, chopped
1/3 cup mild or medium salsa
2 tablespoons olive oil
1 teaspoon chipotle chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 1/2 teaspoons salt
1 teaspoons freshly cracked black pepper
flour tortillas, to serve
fresh cilantro, for garnish

Step 1: Preheat oven to 400 degrees F. In a large bowl, toss the chicken, veggies, salsa, olive oil, and spices together. Toss to coat.

Step 2: Spread the seasoned chicken mixture on a large rimmed baking sheet.

Step 3: Bake until chicken is completely cooked through and vegetables are tender, about 25 minutes. Serve in flour tortillas with fresh cilantro leaves.

Would the peppers taste terrible if I froze this after cooking? If so, can I freeze uncooked ingredients?

I have never frozen this dish but in my experience, the quality of reheated frozen veggies just isn't the same. I do freeze many dishes in individual containers so I have lunches but they are just edible - certainly not as good as when they are first cooked. They are not like braised dishes - chiles, stews, soups which are just as good when frozen and reheated.

So I would not deliberately make this dish and freeze the whole thing. However, I would eat leftovers as an easy lunch to keep in the freezer.

No need to cover. There isn't a sauce and enough moisture is supplied by the veggies and salsa.
