I love making this delicious chicken salad for dinner all the time but my husband usually doesn't fill up on it I feel any side dish would be weird with it (I enjoy plating dinner on a nightly basis) any suggestions of something that would go with it and not look weird?

I don't know what kind of a chicken salad you're making but some nice green beans would make a lovely side. I have a preference for 'blister beans'. Green beans stir fried on very high heat until they blister, then add about 1/2 tsp of sugar and a tablespoon of soy sauce after they are off the the heat. Perhaps a nice fruit salad, or a veggie slaw with an oil and vinegar dressing.

Do you use lettuce or something, too, or just the cucumber and tomatoes? And do you serve it cold? Sounds really nice with lunch on Shabbos!

You are right! I left out lettuce I like when the chicken is still warm so the juice is flowing but I'm sure it can be done cold as well

How about baked potatoes?
Nice chunky bread might be nice.
You could also make a potato leak soup or other thickand filling soup as a starter.

I like a rice dish on the side served in little bowls. Or warm and crusty garlic bread.
