ISO cookie crunch brownie recipe from kbd entertains

anyone have cookie crunch brownie recipw from kosher by design entertains. I dont have my cookbook with me and id like to make them.

1 T. flour
12 ounces semi sweet chocolate, broken up
1 1/2 cups sugar
3/4 cup butter or margarine
1 cup flour
1/4 cup dutch processed cocoa, sifted
2 tsp. baking powder
1/4 tsp. salt
4 large eggs, room temp.
2 tsp. instant coffee granules or espresso powder
1 T. pure vanilla extract
15 oreo cookies or parve chocolate sandwich cookies, broken into chunks
4-5 extra cookies, broken in 1/2 for garnish

Arrange rack in the middle of your oven and preheat to 350 degrees. Spray an 11 by 7 by 1 1/2 inch brownie pan with nonstick spray. Place the tablespoon of flour into the pan. Shake it all around and tap it over sink or garbage can to discard excess.

In heatproof medium bowl set over a saucepan of simmering water, heat the chocolate, sugar, and butter or margarine. Whisk until melted and smooth. Remove bowl from heat and set aside to cool to room temp., about 15-20 minutes.

In a small bowl, mix flour, cocoa, baking powder, and salt.

In a medium bowl, with a mixer at medium speed, beat the eggs, coffee, and vanilla until foamy. If your stand mixer has a whisk attachment, it will work well here.

Blend the cooled chocolate mixture into the egg mixture.

Sprinkle all but 4 T. of the flour/cocoa mixture into the chocolate mixture. Place the 15 broken cookies into the remaining flour/cocoa mixture and toss to combine. Add the cookie mixture into the chocolate mixture, stirring gently to combine; try not to crush the cookies. Pour batter into prepared pan. Place the extra broken cookies on top of the batter for garnish.

Bake 35 minutes; do not overbake. Allow to cool. Refrigerate, tightly wrapped, until cold. Cut into squares. Store tightly wrapped in fridge. Serve chilled.

I was actually just looking at this recipe earlier today, & I was thinking about trying it tomorrow. I have one question: I don't have an 11 by 7 inch brownie pan, & I don't think they sell that size disposable. Is there any other pan I can use successfully?

Then it comes out flatter than intended. Why not try 2 smaller sizes instead of 1?

I made it in one 9" round pan and one smaller size round pan and it came out perfectly fine.

They make that size in disposable. Smile
It's just a little smaller than a 9x13. And much more shallow (not as deep.)
Kind of like the 8x8 disposable brownie pan, but longer, and rectangular.

Wow! I was just in the mood to make these and googled the recipe and ended up...here;-) Thanks!
Reminds me a lot of the Baked brownie recipe. Also, not to far off from the America's Test Kitchen chocolate chocolate chip cookies.

Can you refrigerate this batter before baking? If yes, do you need to return it to room temperature before before? Does anyone know? Thanks!

Do you refrigerate cake batter on a regular basis? I've never tried that.
