I recently had a delicious capon (dark chicken cutlet with skin).
It was stuffed with rice and spices inside and on top. It was fantastic with tons of flavor.
No duck sauce.
I'm not able to contact the cook now for the recipe and would love it for yom tov.

Not really. Very typical probably - like salt, pepper, garlic, paprika. Nothing out of the ordinary.
but the final taste was fantastic.
I'm going to see if I can find someone else who was there to see if they know the recipe. If I find it I will share.

Sky, I saw this recipe and thought of you:
2 cups of rice, cooked according to pkg directions
1 teaspoon paprika
1 teaspoon turmeric
1 teaspoon salt
1 onion, chopped
1 stalk celery, chopped
4 button mushrooms, chopped
2 tablespoons chopped red pepper
Season cooked rice with spices.
Saute vegetables and add to rice.
Stuff cleaned capons and bake at 400.

I just saw this. Thanks.
I tried winging it last time and it didn't come out that tasty. This sounds like what I was looking for - the measurements will help.
