I started doing one and whole family love it. It's easy and might not be what others would see as Chinese soup but for us its good enough.

I cook chicken soup but don't add any vegetable apart from garlic and/or onion. Then I poach cubed/sliced chicken in the soup for about 10-15 min and take it out. I boil lokshen separately.
By the meal I add the chicken, lokshen and Chinese leaves in the plate or bowl of soup.
Never leave the chicken, lokshen and chinese leaves in the pot with the soup. The chicken will dry out and lokshen gets to soft.
