I'd like to make chicken rollups with a sweet potato filling, any sauce ideas? I need some liquid in which to cook/bake the chicken.

I usually mix apricot jelly with spices. You can also use duck sauce.

Dredge in cornflake crumbs and bake uncovered for 30 minutes.
Serve warm sauce on the side. Either duck sauce or a combination of apricot jam, soy sauce and mustard or your favorite sauce.

The recipe I have calls for 1/3 C each apricot jelly, duck sauce, and barbecue sauce.
