This is my go-to cornbread recipe: I use water instead of the milk if I don't have almond milk on hand and it's just fine. It's not as sweet as other cornbreads I've tasted, which I also like. My personal tweak is to add a handful of frozen corn kernels to the batter, which adds a nice texture. I also like it better when I use coarsely ground cornmeal instead of finely-ground.

This is the recipe I always use. It is definitely a sweet cornbread in case that is what you're lookiing for, and it works great as muffins too:

A few tweaks:
I use less sugar, about half a cup. It's still plenty sweet (and I have a sweet tooth...).
I use a bit more oil, also about half a cup, to make it less crumbly.
For besari I use orange juice instead of the milk. or you can use any parve milk substitute that you like.
I also use this recipe as a the base for tamali pie, in which case I reduce the sugar even further and add some corn kernels to the batter.
