This year is also my first time making this. I googled it to see what to do. I bought a thick aluminum deep tin. Planning to drizzle olive oil, add basic seasoning, cover, and bake for 2 hours. That's it.
My neighbor told me she cooks it in a sauce on the stove with cooked veges and bay leaves. But I am still getting used to the idea of cooking a sheep's had, so I'm going to go with the dump in the pan and that's it method.

I wash it very well, dry it. Rub with olive oil, fresh garlic and coarse salt. Then I roast it at 400 I think. The little pieces of meat are so yummy.
