I saw this recipe on another thread (posted by anon) and I'd like to try it (without soup mix).
Does anyone know the best way to defrost and reheat this kugel?

5-6 medium zucchini peeled, quartered & sliced
1 medium onion chopped
1 cup flour
1/2 teaspoon baking powder
1-2 tablespoons onion soup mix (to taste)
4 eggs
1/2 cup oil
salt & pepper (to taste)

Mix all the ingredients together. Bake in a greased 9''x13" pan at 350 degrees for 45 mins or until set & golden brown.
It freezes really well.

I use sauteed onions instead of onion soup mix. If you can make this without the flour, PLEAAAAAAAAAAAAASE tell me how!

my zucchini kugels take about 1 minutes to warm up in the toaster oven.

shakleemom, ive found that you can make kugel from any veg w/o flour if you par-cook or defrost in microwave without adding water then squeeze out as much water as possible from the veg. the flour is necessary to absorb some of the water but if you cook it a little longer than usual the water in the veg will boil off in the oven if its not too much.
have you given any thought to chickpea flour? im not sure if thats SCD legal but I know it would be dynamite in this application.

I really appreciate you posting this. I do that with cauliflower and broccoli but the frozen zucchini has peels, I can't have the peels Sad

no beans are allowed on the SCD. The hunt continues.

Can you have potato starch? What is SCD?

No starch is allowed on the SCD diet, including potato starch.

have you tried using stiff eggwhites and baking powder. Can you use any starch like tapioca?

I'm looking for a zucchini kugel recipe like this, where the zucchinis are not grated or cooked.
Does anyone have a recipe like that to recommend? TIA

I tried this recipe this summer.
I just put the zucchini in the food processor, making random chunks with the S blade.
It was good, not great but really decent.
I wanted a veggie side dish I could make in advance.
Definitely not the healthiest veggie side dish because of the added ingredients, but worth it because its good to make in advance for the freezer.
The texture is kind of wet, not very firm.
I reheated uncovered and the top got a little more firm.

I make a really good zuchinni kugel that is very similar to this recipe but the zuchinni is grated. The other differences are the proportions. My kugel uses 1.5 c. flour, 3/4 c. oil, 3 chopped onions, 3 eggs and 1 tblsp (chicken) soup mix. Other amounts are the same.
The flour I use is self-rising so maybe add 1 tsp. baking powder if you use regular flour.
I sprinkle sesame seeds on top of the kugel before baking.
The kugel is not wet - quite firm in fact, maybe b/c it has more flour.
Also, zuchinni kugel is wetter at times when the particular zuchinni that you have has a higher water content and that is not always apparent when it is raw.
The kugel freezes beautifully btw.

It's a good kugel!
I used lots of kosher salt to taste (taste spoon while mixing), sweet Vidalia onions and no soup mix.

I make a zucchini kugel with cut up zucchini-not grated.
It is very similar to the recipe posted above-and gets regular raves!

Mix together (by hand-no mixer needed):

1/2 cup oil
4 eggs
1 cup flour
1 tsp baking powder
3/4 tsp salt
pepper
4 tablespoons (1/4 cup) sugar

when mixed, add: 2 lbs zucchini cut in chunks
1 onion (I like to use larger ones-more flavor)
Bake 350 for about an hour. Its ready when the top is golden.

Makes an 8" or 9" square pan

I just made low carb zucchini mini kugels in silicon muffin bakeware.

Grated zucchini
Grated onion
Egg
Salt to taste
Pepper to taste
Other seasonings to taste optional

The secret is to let the grated zucchini sit for a while and then squeeze as much water out of possible, the dryer the better.
