In salads I would use lemon juice instead, but I'm not sure if it would work in a roast potatoes recipe. What can I use instead?

Sure it would. Why wuld you think not? The active ingredient in both is acid. You can also use citric acid, aka "sour salt", which is what people use on Pesach if they don't use lemons, or even ascorbic acid, aka vitamin C, if you happen to have that around. Lemon juice is a lot cheaper and easier.

If you use lemon juice, increase the amount. Lemon juice is less acidic than vinegar.

I decrease the amount when I use lemon juice as the lemony taste is strong. I use mustard in my roasted potatoes.
