I bought a first cut brisket. Any really soft recipe suggestions for Yom Tov?

I made a pickled brisket roll for RH. Cooked it for a few hours in water. Then cooled it overnight and sliced it thinly the next day.
Made a sauce and poured it over the meat before I warmed it up
1 cup brown sugar
2 tablespoon ketchup
2 tablespoon mustard
2 tablespoon vinegar
2 tablespoon oil

I cut 4 small onions and spread on the bottom of a crockpot. I seasoned both sides of the brisket with garlic, chili powder, cumin and corrinader. I put it on top of the onions. I poured a 15oz can of tomatoes, a quarter cup of molasses and apple cider vinegar and a cup of water and cooked on low for about 8 hours. I adapted the recipe from smitten kitchen. I am either going to shred it or serve it sliced. Not sure yet.
