Here you go:
2 Tblsp. margarine
2 onions, minced in food processor
1 c. enriched long grain rice
22 ounces chicken stock
1 (10 oz) box frozen chopped spinach, thawed and squeezed dry.
salt
freshly ground black pepper
garlic powder
In large frying pan melt marg. over medium high heat. Add onion and rice and sautee until lightly brown, stirring to keep from sticking.
Add chicken stock, spinach, pepper and garlic powder. Reduce heat to simmer, cover and cook for about 20 min or until liquid is absorbed.
10-12 servings

Just adding that I make something very similar that's supposedly a local Arab recipe, and after the rice is cooked I squeeze half a lemon over the cooked dish. I also use olive oil (lots of it...) and fresh minced garlic instead of the marg and garlic powder.
Oh and I use short grain round rice instead of the long grain.
