I need to surprise a 28 yr old female, who doesnt like high tech stuff, and isnt into fashion that much but would LOVE anything related to her profession of Occupational Therapy. IM looking to spend hundreds, or close to a thousand maybe. I want to "knock her socks off" with glee.
Any ideas?

OP here. Shes a relative who happens to be an OT. She doesnt treat me or anyone in my family. But thats her main area of interest.

Fill her room with all sizes, shapes, and colors of therapy balls. Wall to wall. floor to ceiling?
Hang a swing hook into the beam of her ceiling and get her a Hammock chair or some cool sensory chair.

It's a mini trampoline the good ones are quite expensive

My feeling is that if you're looking to spend that much, both she and you want it to be something she really would want and only she can tell you what that is. For surprise value you could make up a gift certificate type thing with a sweet note and put it into a fancy box or whatever cute presentation of your liking, but for the actual big-ticket gift she should get to choose.

Does she have a private practice? If yes, anything for her office, equipment or a decorative item. Perhaps she'd love an all-expenses-paid vacation rather than something OT related. It's a lot of money to spend for something she may not appreciate. So nice that you're so generous and giving.
