Can deli roll be made a few days in advance? If so how should it be stored and reheated to keep it tasting fresh shabbos day?

I freeze it often.
Most recently I defrosted it at room temp and served it at room temp as well on shabbos day.

I make most of my Shabbos food on Friday for Shabbos, isn't that considered fairly normal?

I would freeze it raw. I keep frozen doughs in my freezer. If I end up w enough leftover deli from shabbos, I defrost a dough after shabbos, make the deli roll and freeze.
