1 C ground sunflower seeds (I used my stick blender)
1/2 C ground almonds
1/2 C ground flax seeds
1/4 C sesame seeds (can also mix in black sesame seeds)
2 T crushed dried rosemary
2 Tsp sea salt
Mix all and taste for salt to see if you need more if you want a salty cracker. Then add in :
1 T melted unrefined coconut oil
2 egg whites
Stir well and dump onto parchment covered cookie sheet. Place an additional parchment sheet over it and roll with a rolling pin until it reaches the sides and is uniformly flattened. It takes me a few tries and I cut off parts that are over the sides and move it around but it really only takes a few minutes. Score into cracker size with a knife carefully and place in a 350 oven for 10 min. Recut with knife where you scored and take off the crackers to cool off on a cookie rack. If the center pieces are not done enough, put those back in 2-3 minutes. They will harden when cooled but will crumble when still warm so be careful. Makes me 24 1 1/2 x 3 inch crackers but it depends how you cut them.

Mmm...they are good, thanks for the reminder, maybe I'll make these again soon!
I found another recipe the other day that I wanted to try:
tahini and mustard crackers Tahina is a good way to get in calcium as well!

They last a few months for sure as I forgot I had some and realized a few months later and they tasted great.

Thanks mandksima. Do you eat this freely? or sparingly due to their high caloric value?

Sparingly as not the main meal but a snack or addition to a meal. The same way you eat a small handful of nuts. They are healthy fats so are quite satisfying in small amounts. I only eat veggies unlimited.
