Does anyone have a tried and true recipe for some sort of layered vegetable Kugel or any vegetable Kugel for that matter?

If you want a good broccoli kugel, Google broccoli Google joy of kosher. Jamie geller has a great simple and delicious recipe.

Yes thank you! that's about the ONLY vegetable kugel recipe I have and use... I love it ! I was hoping for more ideas ...thanks for the recommendation though, you have good taste Smile

Substitute cauliflower or chopped spinach for the broccoli. You could also try subbing grated winter or summer squash.
