ISO Cauliflower soup recipe

I have a 2 lb bag of frozen cauliflower florets. I'm looking to make a soup with the whole bag.
I recently made a blended soup with cauliflower, potatoes and chicken soup mix, but it was pretty bland (Maybe because it called for parsnips which I couldn't find). I'm looking for somehting more flavorful.

I fry an onion, add a whole bag of cauliflower and a whole bag of broccoli, one or two potatoes and whatever extra spices you want and blend. It comes out very yummy.

If anyone is interested:

Saute 2 onions and 4 cloves garlic
Add - 2 lbs. cauliflower
2 t. salt
pepper
1 cube frozen dill
2 potatoes (I added an extra)
6 cups water

cook until soft - Blend

You can make the delicious cauliflower soup recipe from Dining In. Fabulous.

2 Tbsp oil
1 onion, diced
2 garlic cloves, crushed
2 large zucchini, peeled and sliced
1 lb. frozen cauliflower
1 Tbsp salt
dash of white or black pepper

Heat oil in a 4 quart pot. Saute onion and garlic until translucent. Add zucchini, cauliflower, salt and pepper. Add water to just cover the vegetables. Bring to a boil. Lower heat and simmer for 30 minutes.
Blend with a hand blender until smooth and creamy.

Double the recipe and use an 8 quart pot for your 2 lb. bag of cauliflower.

I know this is old, but can you verify which cookbook this is from,

I just looked in dining in and the cauliflower soup recipe has carrots and potatoes, do you sub for zucchini?

or is it a different recipe?

This one is AMAZING!


ROASTED CAULIFLOWER SOUP

1 bag frozen cauliflower
2 onions, chunked
8 cloves garlic
1 cup olive oil
7 Tbsp chicken soup mix
8 cup boiling water
3-4 Tbsp dill
salt
white pepper


Place cauliflower, onion and garlic in baking pan. Cover with olive oil.
Bake, uncovered, in oven set at 380 degrees F(180 C) for one hour.
Mix chicken soup mix with boiling water in large pot. Add dill and salt and pepper to taste.
After an hour, remove pan from oven and pour cauliflower, onions and garlic into your pot with the water and spices.
Cook until cauliflower softens.
Blend.
