I want to make it for my kid's birthday- am I crazy? Is it as 'toxic' as it seems?
I try not to load my kids with food coloring so this feels like a bit much (but I love the way it looks!)

If you are near a healthfood store like whole foods you can get a much less nasty food color.

I don't think making rainbow cake once a year is going to do anything.

Its a birthday! A good birthday can't be too healthy IMHO, just make it and enjoy.

I made cupcakes and just couldn't bring myself to get food coloring for the icing. I used the ones from whole foods and the red was orange. I think they might sell two different types... I'm still going to use them rather than artificial dyes, but just be aware that the coloring may be off.

I would stay away if any of your kids have impulse control issues or ADHD. Food coloring exacerbates difficult behaviors-

Love that link

From experience if you're using pom juice it will make it a pale pink unless you use a lot (which is still muted). Didn't work well for frosting because it was too liquidy.

I have used beet or elderberry juice, tumeric and spinach for the colors needed for rainbow cake. I have mainly used for frostings but I am sure there are recipes online for using natural food coloring in cake...
