Has anyone ever made potato kugel at night and then baked in the morning, leaving it prepared but uncooked in the fridge? I will not have time to make the kugel from scratch tomorrow, and this seems like a good option but I'm not sure if it will turn brown/red or weird.

Rather freeze it. It'll get awfully brown in the fridge.

Or bake it now, then leave it on a low temp in the oven with a pan of water all day tomorrow. Overnight potato kugel. Yum! That's what I do on these short Fridays.

If you put it into a tall narrow cylinder type of container only the top inch, or there about, of the mixture will discolor. Then you can discard the top and pour the rest of the mixture into a baking pan and proceed as you normally do.

I've done similar, but not with the fully prepared kugel mix. I just do it with the grated potatoes and I add water and a little lemon juice (to prevent browning). Then in a separate container I mix the grated onion, eggs and seasonings (its okay to have the onion and egg overnight because they're mixed with the seasonings). In the morning, I just drain the potatoes and mix with the other stuff and then bake it.
