Does anyone know any recipes for zucchini latkas? I'm going to be on a massive diet on chanuka...don't want to be dperived Sad

I grate on big zuccini with peels add 2 eggs, little bread crumbs and salt.

I've made them but always used some bread crumbs, matzo meal or small amount of potato to kind of help it stay together. Would love to see a successful zucchini latke recipe that skips the starch altogether. Is there such a recipe?

I like this recipe a lot. It's 1/2 cup flour divided by 10 latkes which is not so bad imho. http://smittenkitchen.com/blog.....ters/
