When in the month do you figure out your maaser? begining or the end? after each paycheck (if payed 2xs per month)?

I give maaser whenever I get paid. I transfer 10% to a separate maaser account at the same time that I make the deposit.

I do this as well. Its very nice to have a bank account that I can just write tzedaka checks from without having to calculate how much maaser I owe/how much money I have available to give. If the account has money in it I have no problem giving.
