You can use a julienne peeler, which doesn't take up space and is as big as any other vegetable peeler (I have the oxo julienne peeler and love it). You end up with long spaghetti strands.
Or you can buy a spiralizer so you can get curly noodles.

You can also use a mandolin with the slicer blade that cuts it into small strands. I don't need a one-hit-wonder kitchen gadget, so I just use my mandolin.

You can also use spaghetti squash, which very easily separates into spaghetti like strands.

I like the paderno. It's quick and easy, but does take up more space than the peeler type.

I use a Julienne peeler.
I found it quicker then taking out the mandolin and cleaning it (it could also be I've never learned to use a mandolin efficiently).
