Looking for another chicken salad recipe

Any ideas? I usually make a caesar dressing or Italian dressing and toss with grilled or breaded chicken pieces, but I am so bored of it. Any new ideas that are more of a fuller meal? I haven't made the chicken yet, but I do have an open bag of lettuce that needs to be used ASAP.

(Other filling lettuce-based salads welcome, too!)

What about a Chinese Chicken salad dressing. If you don't have a recipe, I can post it.

Here's a tahini based dressing which you can adapt.

Grilled Chicken and Romaine Salad with Tahini Lemon Dressing
Adapted from Sunset.com

Serves 4

1-1/4 pounds boned, skinned chicken breast, halved lengthwise
1 tablespoon plus 1/4 cup olive oil
1 teaspoon salt, divided
1 teaspoon pepper, divided
4 cups of chopped romaine lettuce
3 tablespoons tahini (sesame paste)
Zest and juice of 1 lemon
1 tablespoon honey
1 garlic clove, minced
2 small firm, crisp apples, cored and chopped
1/4 cup chopped toasted almonds
4 Medjool dates, pitted and chopped (1/4 cup)

Heat a grill or a grill pan to medium-high (about 450°). Brush chicken with 1 tablespoon oil and season with 1/2 teaspoon salt and pepper. Grill chicken, turning once, until just cooked through, 4 to 5 minutes total. Transfer to a plate.

Whisk remaining 1/4 cup oil in a small bowl with tahini, lemon zest and juice, honey, garlic, and remaining 1/2 teaspoon salt and pepper.

Chop chicken into bite-sized pieces, and place into a large salad bowl. Add apples, almonds, and dates. Add dressing and toss and serve.

How about lettuce, chicken, peaches (canned ok), avocado, hearts of palm, cucumber, tomato, glazed walnuts. For the dressing I do balsamic vinaigrette. (3/4c oil, 1/4c balsamic vinegar, IT chopped garlic, 2t Brown sugar, salt and pepper)

My favorite salad:
Iceberg lettuce salad (with carrots and red cabbage)
colored peppers, diced
sliced mushrooms
grape tomatoes, halved
black olives, sliced
baby corn nuggets (or sliced)
canned chick peas

Dressing:
2-3 cloves garlic, crushed
1 cup mayonnaise
1/4 cup vinegar
1/4 cup water
2-3 Tbsp. sugar
salt, to taste

You can add or subtract veggies according to what you like/have in the house. For a light meal I add either grilled chicken pieces or chunks of deli meat.

Coronation chicken!

It's basically chicken salad with subtle curry-flavoured mayo and with some fruity bits. If it's good for Her Majesty, it's certainly good for us too...

Poach 2 whole poached chicken supreme (skinless, boneless breasts) with 1 stalk celery, 1/2 onion. Once cool to handle, cut both chicken and vegetables in bite-size (1.5") cubes. Save cooking liquid for chicken soup/broth/other cooking.

1/2 cup mayonnaise
2 teasp mild curry paste or powder
2 tbsp apricot jam
2 teasp tomato concentrate/tomato puree
6-8 pieces dried apircot, cut in small pieces

Mix first 4 ingredients, and toss with chicken/veggies/apricots.

Garnish with toasted almond flakes.
You can also add cubed fresh mango.
Serve on top of beds of lettuce.

Here's another Chinese recipe: Liang Bang chicken (not to be confused with Bang Bang chicken)

2 whole chicken supreme, poached
1 cucumber, cut in fine julienne (best done with food processor or hand-held shredder), remove seeds first if necessary
3-4 stalks salad onion (scallion), both green and white parts chopped finely

Dressing:
A generous pinch of salt
3 tbsp plain tehini (full strength ones sold in a jar/tin at room temp, not pre-made ones in fridge section)
2 tbsp soy sauce
1 tbsp vinegar (cider or grain)
1 tbsp orange juice or sherry or dry white wine
1 tbsp honey
a bit of grated ginger and/or minced garlic
chili peppers (or chili oil or chili paste if you have one)

Shred poached chicken. Add cucumber and salad onion, and sprinkle a generous pinch of salt. Combine all dressing ingredients (best to incorporate other liquids gradually into tehini, which will first emulsify). If too thick, dilute with a small amount of poached liquid. Dress chicken and cucumber, serve on its own, or over bed of lettuce or over cold glass noodle. Garnish with toasted sesame seeds and/or fried shallots/onion.
